My restaurant management and consulting group, Red Beard Restaurants. We currently have four concepts: Gunshow, Revival, Communion, and Terminus City.

2. About Your Kitchen: 
We have a galley kitchen at Gunshow, lots of storage, counter-top space, and light.

3. Your Favorite Chef Works Item:
The Rockford Chefs Bib Apron. I’m not one of those chefs who can keep an apron clean very long so I like darker colors! I also like that it’s a sturdy material that holds up to laundering but not too heavy.

4. First Job: 
Kitchen supply store in an outlet mall in Locust Grove, GA

5. Your Favorite Cookbook: 
It’s a tie: The French Laundry by Thomas Keller, A Taste of Country Cooking by Edna Lewis, and Essential Cuisine by Michel Bras

My granny Geneva Gillespie. She taught me to love food and to believe in the power food possessed.

8. Your Specialty Dish: 
Pork skin risotto – which is really a farrisotto since its made with farro.

9. Favorite Dish To Eat: 
Buffalo wings.

10. Weirdest Thing You Ever Ate: 
Raw jellyfish salad.

11. Favorite Ice Cream Flavor: 
Ben & Jerry’s, Boom Chocolatta.

12. Favorite Drink: 
Coca-Cola.

13. Favorite Wine: 
1982 Chateau Palmer.

14. Who Would You Most Like To Cook For: 
The UGA Bulldawgs football team.

15. Who Would You Least Like To Cook For: 
Anyone with a closed-minded view of food.

16. Favorite Things To Do When Not Cooking: 
Hunting, camping, drink wine.

17. Your latest project: 
My latest project is Communion, which opened earlier this year. It’s a German beer garden-inspired backyard in Decatur behind Revival. It’s a place where friends and neighbors can meet and share a drink, a snack from our food truck or play a game of horseshoes together.

18. Favorite City and Why:
Vienna, Austria. It’s beautiful but I’ve only been there at Christmas and I love it because it’s the fairy tale version of what Christmas should look like.

19. Your Greatest Indulgence: 
Cars and watches.

20. Your All Time Best Culinary Tip:
Learn to care about the people who are going to eat your food and you will make it better.
