2. About Your Kitchen: Lots of stainless steel, high heat and small tools.

3. Your Favorite Chef Works Item: : The short-sleeve Capri Premium Cotton Chef Coat (ECSS) because it’s “fitty” and comfortable. And the Valais V-Series Chef Coat (VSSS).

4. First Job: Where else but Bugsy’s in St Catherine’s, Ontario, Canada, chopping as many chicken wings as I could prep and make every night. I was the “Chicken Wing Assassinator” at Bugsy’s. I didn’t get to cook them for a long time

5. Your Favorite Cookbook: ALL of Joel Robuchon’s cookbooks.

6. Your Awards: My favorite is probably still the 1992 Gold Medal from the Culinary Olympics in Frankfurt, Germany. That one is still very special to me because I loved it, loved my team – it was such a special time in my life.

7. Your Cooking Inspiration: Produce that is “in-season” and ingredients that are in front of you.

8. Your Specialty Dish: Scotch Eggs – it comes naturally to me as I am Scottish.

9. Favorite Dish To Eat: Fish & Chips for the same reason as above.

10. Weirdest Thing You Ever Ate: Monkey brains. In Malaysia they aren’t unusual and I’d had about 12 lagers, so at that point there was nothing weird about it.

11. Favorite Ice Cream Flavor: Coconut – tropical flavors make me happy.

12. Favorite Drink: A Rusty Nail cocktail made by mixing Drambuie and Scotch whisky. Don’t ask!

13. Favorite Wine: A 1982 Chateau Margaux from the Bordeaux region of France. It’s a first growth and it always drinks well. All Margauxs drink well.

14. Who Would You Most Like To Cook For: Sean Connery as I think that would be a great dinner.

15. Who Would You Least Like To Cook For: Mr. T.

16. Favorite Things To Do When Not Cooking: Firstly hanging out with my sons, followed by boxing, watching hockey and an occasional soccer (football) game.

17. Your latest project: I’m working on a really great new European-styled market in Newport Beach, California that will combine the best of a great farmers market with bespoke merchants and a lot of fun next to the water.

18. Favorite City and Why: Sydney, Australia, because I love the beaches, the food, the geography. I lived there for two amazing years – gorgeous!

19. Your Greatest Indulgence: An In-N-Out Burger.

20. Your All Time Best Culinary Tip: : Bring along a sharp knife and don’t forget your sea salt.
