2. About Your Kitchen: A well-tuned and cross-trained machine! My team and I work in a progressive, positive environment with a strong focus on one goal: to consistently provide our customers with a memorable dining experience.

3. Your Favorite Chef Works Item: : The Palermo Executive Chef Coat, EWCV.  It is comfortable, durable, fashionable and breathable.  It’s a plus having Chef Works USA headquarters right here in San Diego.

4. First Job: I started at a car dealership, but my first restaurant job was in Front of House as a busboy/food-runner. I later transitioned into the Back of House as a dishwasher/prep cook.

5. Your Favorite Cookbook: Culinary Artistry by Andrew Dornenburg & Karen Page or Alinea by Grant Achatz.

6. Your Awards: I’ve been honored to receive the 2015 Gold Medallion Award for Best Brewery Restaurant, been nominated for 2010’s Best Chef of America and named 2008’s Chef Showdown Champion.

7. Your Cooking Inspiration: I get inspiration from my daily life experiences – what I see and do, who I interact with, my travels and music.

8. Your Specialty Dish: Porcini Agnolotti with duck confit, grilled corn, Champagne grapes and port.

9. Favorite Dish To Eat: Mexican street tacos, specifically in Baja California, Mexico.

10. Weirdest Thing You Ever Ate: Balut – a duck embryo that is boiled and eaten in the shell. Sold as streetfood in the Philippines.

11. Favorite Ice Cream Flavor: Honey Flower at the Gelato Vero Caffe in San Diego, USA.

12. Favorite Drink: Unsweetened iced tea.

13. Favorite Wine: A 2008 Quixote Stags Leap Petite Syrah, Napa Valley, USA.

14. Who Would You Most Like To Cook For: I’d like to cook for my extended family and close friends (past and present). I work so much and always work on the holidays, so I rarely get to see them.

15. Who Would You Least Like To Cook For: The Yelp Elite Squad.

16. Favorite Things To Do When Not Cooking: Spending time with my son Elijah.

17. Your latest project: Ballast Point (brewers and distillers), coming to a town near you in the USA.

18. Favorite City and Why: San Francisco!  The food, history and overall energy makes it the best food city in the USA, hands down.

19. Your Greatest Indulgence: Any type of custard.

20. Your All Time Best Culinary Tip: : Don’t cut corners, don’t arrive late, lead by example and always, always maintain a sense of urgency.
